A BENEFICIAL AROMATIC PULAO IS THE GAME CHANGER

     PAALAK PULAO

If you want to have something light for lunch or dinner, you consider to make Pulao. But what if I tell you that you can transform the Pulao and make it light as well as nutritious. And most importantly, Fast. We all know how much nutrients does Spinach leaves contain. Its stew is super-packed of health as well. And not just that. Many people think that Spinach can ruin the taste of anything with its punch of bitterness. But it is not like that. Spinach can be proven healthy and tasty likewise. So let's go and see the recipe of Paalak Pulao made in a jiffy. 
                                                         

INGREDIENTS:
Spinach- 2 cups
Basmati rice- 4 cups
Bay leaf- 1
Cumin seeds- 1 tsp
Cardamom- 3
Cinnamon- 1 small
Black cardamom- 1
Cloves- 4
Peppercorns- 7
Star anise- 1
Onions- 4
Tomatoes- 2
Cashews- 15
Raisins- 20
Salt- As per taste
Sugar- 1 tbsp
Water- 5 cups

METHOD:
Wash the rice and drain the water. Slice the onions and tomatoes. Add Ghee in a pan and heat it. Fry the cashews and take them out from the pan. Add the whole garam masala and wait for them to temper a little. Then add the sliced onions and fry them until they get brown. After that, add chopped tomatoes into it. Fry them till they get soft and put the spinach leaves in the pan. Now add the rice and cook it up to 5 mins. Transfer the rice and stewed vegetables into a pressure cooker. Now add salt, sugar and water into the pressure cooker and cook the Pulao on medium to high flame up to 1 whistle. After the cooker blows the whistle, wait for it to release the pressure more after turning of the flame. Healthy and Tasty Paalak Pulao is ready in no time. Serve hot with fresh vegetable Raita made with finely chopped Cucumbers, tomatoes and onions.
