 MANGO PICKLES: SOUR AND SWEET


Remember those days when Dadi Maa and Nani Maa made our favourite 'aachaars' out of Raw Mango, served them with her stews and paratha, packed them for our journey back to home in Glass vessels. The pickles made with love were the best souvenirs ever. Now everything is Readymade. The essence of Handmade pickles are no more there. 
    

I love to learn new things from my Mom.She also makes lip-smacking pickles. I learned to make Aam Aachaar in 4 different styles. Two of them will be sour and the other two will be sweet and sour. So let's move to our recipes.

1. Aam-Mirch Aachaar:
    This aachaar is made without removing the peels.The ingredients are pretty basic.
 
   INGREDIENTS:
Raw Mangoes- 4 no.
Green chillies- 8 no.
Salt- 1/2 cup
Turmeric powder- 1 tsp
Red Chilli Powder- 1 tsp
Mustard Oil- 1 cup
Fine Mustard powder- 2 tsp
Fennel powder- 1 tsp
Fenugreek powder(roasted)- 1 pinch

    METHOD:
To make this aachaar, first wash the mangoes and green chillies and let them dry.
When they get dry, cut them into small pieces without peeling the Mangoes and transfer them into a bowl. Add salt, turmeric, red chilli powder and oil into them. Give them a good mix. Now add the mustard powder, fennel powder and fenugreek powder into them. Mix the whole thing properly and your aachaar is ready to go with anything.

2. Guramma:
  This aachaar will be sweet and will have a slight punch of sourness in it.

   INGREDIENTS:
Raw Mangoes-4 no.
Sugar-  Double the measurement of the mangoes means if there are 1/2 kg of mangoes then 1 kg sugar will be added.
Cumin seeds- 1 tsp
Kalaunji- 1 tsp
Red chilli powder- 1 tsp
Fennel seeds(crushed)- 1 tsp
Black salt- 1 tsp
Salt- 1 tsp

   METHOD:
Wash the mangoes and peel them. Cut them into small pieces. Take a pan and put the mangoes into it. Add cumin, kalaunji, fennel and sugar into the mangoes. Let the sugar melt and add salt and black salt into it. Let the mangoes absorb the sugar and soften. Cook them for a while. Guramma is ready.

3. KUCCHA:
   Kuccha is the crushed version of mango aachaar. It can be eaten without anything like a Carry. It is the simplest to prepare.


   INGREDIENTS:
Raw mangoes- 4 no.
Green chillies- 6 no.
Garlic pods- 10 no.
Salt- 1 tsp
Fennel powder- 1/4th tsp
Mustard powder-1/4th tsp
Fenugreek powder- 1/4th tsp 

  METHOD:
Wash and peel the mangoes. Cut the mangoes, green chillies and garlic pods and cut them into medium pieces. Crush them with a stone grinder together in a bowl. Add salt, fennel, mustard and fenugreek powder into the mangoes. Crush them and mix them. Kuccha is ready to burst in your mouths.

4. Mango Jelly:
   I think it's every child's favorite one. It tastes like candy and children specially love it.
  INGREDIENTS:
Raw Mangoes- 4 no.
Sugar- 1 cup
Cumin seeds- 1 tsp
Kalaunji- 1 tsp
Red chilli powder- 1 tsp
Fennel seeds(crushed)- 1 tsp
Black salt- 1 tsp
Salt- 1 tsp

  METHOD:
Wash the mangoes and peel them. Shred them carefully. Take a pan and put the mangoes into it. Add cumin, kalaunji, fennel and sugar into the mangoes. Let the sugar melt and add salt and black salt into it. Let the mangoes absorb the sugar and soften. Cook them for a while. Sweet Mango Jelly is ready.
