    CHOLE BHATURE

You ask Indians about Chole Bhature and they can give a full list of compliments about it. And why not? It deserves admiration, because of its special and distinct mixture of spices. And I bet you, you can't speak a word against it after you try it. Chole(Chickpea) is also very rich in Protein and Chole masala is the best dish that can be ever made with it. Bhature is made from Refined flour which is not healthy but it is meant to be made with it. Otherwise if you are so much concerned for your health, you can always enjoy Chole Puri. But a treat of Chole Bhature after your dieting will do no bad to your body. 
                                                               

The process of making Bhature is pretty simple. Basically Bhature contains Maida and is kneaded with Curd rather than water. A soft dough is kneaded with curd and maida which might be little sticky. Roll the dough with dry flour. Deep fry it in oil till it puffs up. The recipe for Chole is as follows:

INGREDIENTS:
Chole- 2 cup(soaked overnight)
Mustard oil- 4 tbsp
Bay leaf- 1
Cumin seeds- 1 tsp
Onions- 4
Tomatoes- 3
Turmeric powder-  1 tsp
Red Chilli powder- 2 tsp
Coriander powder- 2 tsp
Black pepper powder- 1 tsp
Garam masala- 1/2 tsp
Raw cumin powder- 1 tsp
Salt- as per taste
Kasturi Methi- 1 tbsp
Chopped coriander leaves
Water- 2 cup

METHOD:
Chop the onions and tomatoes. Heat the oil in a wok. Put cumin seeds and bay leaf into the oil. After they get a little tempered, add the sliced onions into the oil. Fry them until they become golden brown. Now add the soaked Chole into the fried onions. Cook them for about 2 mins. Add turmeric powder, red chilli powder, coriander powder, black pepper powder, raw cumin powder and garam masala into the chole. Cook for another 5 mins. At last add the salt, kasturi methi and  coriander leaves and fry the chole for a little while in the wok. Transfer the half cooked chole into a cooker and add water. Cook the chole in the cooker on high flame until the whistle blows one time. Then lower the flame and cook it for another 10 mins. Your chole is cooked fully. 
Serve the chole with finely chopped onions, curd, roasted cumin powder and black salt on the top and cherish its taste with Bhature and onion salad.
